Chocolates, macarons, and galettes… From the pastry chef’s pop-up store on the Ground Floor of the New Building, Pierre Hermé Paris invites you to immerse yourself in sweet delicacies this holiday season.

Inspired by the hand-glazed ceramic and porcelain works of ceramicist and ocean advocate Courtney Mattison, pastry chef and chocolatier Pierre Hermé has created the Abysses collection.

Like a dive into the depths of the ocean, this array of chocolates, macarons, and other cakes invites you to dream, to admire their beauty… and to indulge!

Enjoy festive sweet treats at Samaritaine, with a colorful Advent calendar filled with 24 creations to delight your taste buds. A true gift to unwrap! Discover our three Advent calendar editions: the iconic Signature, the Infiniment Gourmand featuring an extra pack of chocolates for those who can’t wait, and the Calendrier d’Exception, with a stunning Christmas bauble.

Unique Macarons and Reimagined Galettes

The presentation boxes, with their blue hues and sea foam-colored reliefs, reveal chocolate candies, truffles, and marrons glacés that are as irresistible as ever.

With his macarons, Pierre Hermé continues to innovate, offering original and surprising flavor combinations such as mandarin with gingerbread, mango with honey, grapefruit with celery, as well as white truffle, rose, and black lemon.

For the holiday season, panettones and other cakes remain Pierre Hermé’s unmissable creations. Made with natural yeast, the panettones require no less than 65 hours of work to achieve their soft crumb and delicate texture. This season, the chef has infused them with his signature flavors, including Ispahan, Arya, Infiniment Chocolat, and Infiniment Noisette.

Finally, sample his scrumptious, retro-style galettes for Epiphany, also available in Samaritaine’s pop-up store. Choose from Infiniment Amande with its mouth-watering cream, Mogador with notes of passion fruit and roasted pineapple, Galette Façon Pain Perdu for an incomparable moist texture, and Brioche Feuilletée Faubourg Saint-Honoré.

A boundless creative force, Pierre Hermé immerses you in the magic of Christmas with a collection that will be available at Samaritaine through January 31, 2026.
